Homemade Chicken Bone Broth Ramen – A Nutritious 2-Minute Noodle Knockoff  

If your kids love instant noodles but you want a healthier, homemade alternative, this recipe is for you! By using a rich, homemade chicken bone broth as the base, you get all the goodness of slow-cooked nutrients while still keeping it as quick and easy as a packet of 2-minute noodles.  

Step 1: Make the Chicken Bone Broth 
Ingredients:
- 1 whole chicken carcass
- 1 onion, halved  
- 2 carrots, roughly chopped  
- 2 celery stalks, roughly chopped  
- 3 cloves garlic, smashed  
- whatever veg you got in the fridge to be honest
- 1 tablespoon apple cider vinegar (helps extract nutrients)  
- 1 teaspoon salt (adjust to taste)  
- 8 cups water  

Instructions:
1. Place all ingredients in a large pot or slow cooker.  
2. Cover with water and bring to a boil.  
3. Reduce heat and simmer for at least 4 hours. If using a slow cooker, let it go on low for 8-12 hours. 
4. Strain the broth, discarding solids. Store in the fridge for up to 5 days or freeze for later use.  


Step 2: Make the 2-Minute Noodle Knockoff
Ingredients: 
- 2 cups homemade chicken bone broth  
- 1 pack of ramen noodles 
- ½ teaspoon soy sauce (optional, for extra flavour)  
- A sprinkle of spring onions
- A boiled egg or shredded chicken (optional)

Instructions:
1. In a pot, bring 2 cups of your homemade broth to a boil.  
2. Add the noodles and cook for 4 minutes
3. 
4. Stir in a little soy sauce, top with spring onions, and serve.
